Went Santouka Ramen at Central Mall with Fiona just now. Her colleague recommended this ramen place.
Santouka is on the second floor of Central Mall at Clarke Quay MRT. It's a small unassuming shop tucked in a inconspicuous corner facing the River and Clarke Quay. There were like 8 tables I guess and 4 counter seats. It bode well that the clientle had some Japanese customers
We think the ramen here is better than Marutama. The Tamago loses out according to Fiona. I feel the Tamago here is richer in flavour compared to the one at Marutama.

The miso soup is saltier compared to the Shoyu one. The broth is a rich stock base that is stronger in flavour compared to Marutama's. I find that the miso soup is almost as salty as Baikohken's. The shoyu soup is lighter in comparison and feels less jelak. I just read a few food blogs. Apparently Santouka is more famous for their Shio soup ramen. Will try that another time. The noodles are thicker and have a better bite compared to Marutama's. The Char Siew here comes in a normal sliced piece unlike the other two ramen places which serves the rolled up char siew slices. Still prefer Baikohken's really soft char siew.
Ikura Sake Don.
I don't really fancy boiled salmon I guess but this was much less fishy than expected. I loved the ikura (marinated salmon roe) for these little morsels yielded richy briney goodness with each bite. The sensation of the salmon flakes, rice and the popping of each nodule of salmon roes made an interesting interplay on the palate.
Each set came with this simple yet refreshing salad. The simple soy based dressing had a nice zesty zing to it that freshened the taste buds and helped to bring out the sweet flavours of the cherry tomato and sweet corn kernels in the salad.
